Maroon Restaurant

Maroon is a restaurant on Kutuzovsky Prospekt that blends Middle Eastern traditions with a modern Moscow twist. The project brings together the cuisines of Israel, Morocco, Libya, and Syria, emphasizing authentic cooking techniques and striking presentation. At the heart of the concept is an open kitchen, open flames, and a commitment to classic recipes without simplification or stylization.

The space is organized as a large dining hall with a visually dynamic kitchen: a grill, wood-fired oven, and tagine become part of the overall experience. The restaurant is open all day, including for breakfast, and is suitable for both casual visits and longer dinners. Vladimir Bogozhavets is in charge of the kitchen; his experience and specialization in Middle Eastern cuisine form the professional foundation of the project.

Culinary Concept and Cuisine

Maroon’s menu is built around traditional Middle Eastern dishes with an emphasis on technique and ingredients. Appetizers and dishes meant for sharing play a key role, reflecting the region’s dining culture. The menu features meze, oven-baked dishes, grilled meats, as well as fish and seafood prepared according to classic recipes.

Bar, Wine List, and Format

Maroon’s wine list is structured as a standalone component of the concept and is geared toward professional-level curation. Experts with extensive tasting experience contributed to its development, which is reflected in the depth and variety of selections. The bar complements the dining experience and supports the restaurant’s overall style.

The restaurant operates in an expanded format: in addition to the main menu, breakfasts, family-friendly options, and special events are available.
