From February 21 to 28, dishes from a special menu inspired by the gastronomic traditions of the Sakha people. Stroganina in "shock freezing", a recipe for Indigirka from the banks of the Yakut River, an abundance of fermented milk products, ikryaniki in the author's adaptation, broth on giblets and steak from young foal - a reasonable use of all ingredients.
The chef added a modern presentation to the berry dessert, popular among the Yakuts, while preserving the pure taste of the products, which remained untouched by humans in the harsh cold.
