Folk on Tsvetnoy Boulevard is a prominent restaurant concept in Moscow that offers a modern take on Caucasian and Central Asian cuisine. The concept revolves around reinterpreting traditional flavors through an urban lens: without literal replication, yet preserving distinctive regional accents. The project is developed by the Folk Team, focusing on local ingredients, modern techniques, and accessible presentation. The restaurant is open daily from morning until midnight, making it a versatile choice for various occasions throughout the day.
The space and gastronomy are designed as a unified system: from breakfasts to evening visits, a consistent rhythm and logic are maintained. Short meetings, business lunches, and longer dinners are equally at home here. At the same time, the atmosphere remains lively and open, without excessive formality, which aligns with the project’s overarching concept—a modern urban restaurant with an ethnic character.
Kitchen and Bar
Folk’s kitchen revolves around an open fire, an open oven, and expressive southern flavors. The menu is based on familiar dishes adapted to a modern format: they retain their character but become lighter in both perception and presentation. The handling of ingredients and technique plays a key role: the focus is on texture, temperature, and precision of execution. This approach allows traditional recipes to shine without feeling overloaded or overly “ethnic.”
The menu combines key themes: shashliks, lamb dishes, kebabs, kyufta, pastries, and lahmajuns, as well as breakfasts that fit seamlessly into the overall concept. The bar menu continues this gastronomic theme: it features unconventional ingredients, local flavors, and original combinations. The drink selection includes spirits made from fermented products, as well as wines from southern regions, including modern and experimental options.
