KAIFUSO
Kaifuso is an evening restaurant-club in central Moscow on Kuznetsky Most, open from 18:00 to 04:00. The concept is designed for a long city night: it’s easy to start with a full dinner, move on to cocktails, and stay late as the space gradually shifts its rhythm and mood. Arkady Novikov’s project focuses on blending gastronomy, aesthetics, and club energy without abrupt transitions.
The name Kaifuso refers to an 8th-century Japanese poetic tradition and sets the tone for the entire concept. The idea of a cultural dialogue and attention to nuance is reflected in both the menu and the presentation. The cuisine is built as a journey across Asia: different traditions don’t compete, they come together as one cohesive, well-structured whole.
Cuisine and team
Gastronomy at Kaifuso is led by brand chef Igor Kornev. The Chinese direction is handled by a family team from Shenyang headed by Chef Liu Xueyang: together with his wife Zhe Zhe, a dough specialist, and other relatives, they ensure consistent quality and precise execution. This part of the menu features Peking duck with crisp skin, dim sum, and black pepper beef. The Japanese line is built on clean flavors and technique: at the sushi bar, chefs from Tokyo and Osaka work with the freshest fish, while standout hot dishes include miso black cod, salmon with edamame, and marbled wagyu.

Interior and the evening format
Kaifuso’s interior was created by the design bureau of Evgenia Uzhogova and feels like a single, carefully composed statement rather than a set of decorative tricks. Details set the mood: a wall mural with peonies and cranes, a solid bar counter made from elm, and leather sofas in a rich vermilion tone. Soft, precisely tuned lighting and comfortable seating shape a space that works equally well for dinner and for lingering at the bar closer to midnight.
Later in the night, Kaifuso amplifies its club side: the lights dim, the music becomes more energetic, and the atmosphere grows denser. There’s a subtle nod to the aesthetics of New York’s Chinatown in the 1950s, not as direct stylization but as a refined cultural accent. The result is a destination for those who appreciate Asian cuisine, thoughtful design, and an evening flow that naturally continues deep into the night.
