Olluco
Olluco is an intimate chef-driven restaurant in central Moscow, on Daev Lane. The project is built around a Peruvian culinary lens, but without directly copying “national cuisine.” It’s more about techniques, ingredients, and pairings that draw from different cultures and bring them together into one story. The concept is rooted in the work of Virgilio Martínez’s team and the research-driven Mater Iniciativa approach, while the kitchen on-site is led by chef Nicanor Vieira.
The format is closer to a high-end contemporary tasting restaurant. The main evening scenario is a tasting menu with a carefully designed sequence of courses, where pace and the logic of transitions from dish to dish matter. The menu usually offers several set options, including a vegetarian one, so it’s convenient to come with a group that has different preferences. Sets can be paired with a wine or non-alcoholic pairing: drinks are selected to support flavor, acidity, and spice, rather than simply “cover” a course. If you prefer a more relaxed rhythm, there is also an à la carte menu, plus a bar program with signature cocktails and classics.
